What to expect
Paletas are Mexican ice pops made from real fruit. The water ones are bright and tart, like mango, lime or cucumber with chile. The cream ones are richer, like strawberries and cream, coconut or pecan. A paleta cart brings them to your party in a freezer cart. Some carts add a dipping bar, and some make cocktail pops for guests 21 and up.

- The cart, the paletas in the flavors you picked, napkins, and usually an attendant who hands them out and keeps the lid closed.
- Space
- Room for the cart and a short line, in the shade if you're outside.
- Power and water
- Ask your cart. Some plug in, and others stay frozen for the whole booking without an outlet.
- How long
- Packages run about 3 to 4 hours.
- How many
- One pop per guest, one and a half in summer. A 50-pop cart covers about 35 to 50 guests, and a 100-pop cart covers about 70 to 100.

- Houston heat melts paletas fast. Park the cart in the shade and only open it to serve.
- Boozy paletas are for guests 21 and up. Check that your venue allows outside alcohol before you book them.
