What to expect
A mini pancake bar is a griddle cart with a cook who makes silver-dollar pancakes in front of your guests and serves them warm in little boats. Guests pick their toppings: syrup, sprinkles, fruit, chocolate, cajeta or Nutella. It works as dessert, as a brunch, or as the late-night snack at a quince.

- The griddle cart, a cook, the toppings and drizzles bar, and the boats, forks and napkins. Setup and breakdown are part of it.

- About a 10 by 10 foot spot, indoors or under a tent, with room for a line.
- Power and water
- One standard outlet within reach. Many carts bring a generator if there isn't one. Water only matters for events longer than about 4 hours.
- How long
- Service starts at about an hour and a half; most parties book 2 to 3 hours.

- About 10 minis per guest. One cart handles a party of 30 to 100; bigger parties get a custom quote.

- Outdoors from May to September, put the cart in the shade. A hot griddle in July is rough on the cook and the whipped cream.
- Many carts also work markets and pop-ups around Houston, so you can taste before you book.
- If the party is in a park, check the outlet first. Many pavilions don't have one.
